Grain

A cookbook about bread that reads like a manual. 256 pages, forty loaves, one ochre.

Books

Grain is a 170 by 240 hardcover with a cloth spine, set in a slab for the recipes and a text serif for the essays between them. The ochre is the only color besides the photographs, and it is reserved for the numbers a baker actually needs: temperatures, hydration, times.

The flatplan ran to 256 pages because the publisher wanted every loaf to open on a right-hand page. It does.
